Caramelized White Chocolate and Cranberry Cookies

This is probably the first time that I did not think twice before deciding about how to incorporate a particular theme in my baking. The theme this month for Creative Cookie Exchange is Caramel - any kind of caramel in any kind of cookie and as soon as it was announced, I knew what I had to do! I already had a jar full of caramelized white chocolate that I had made some time back on my kitchen counter-top that I wanted to use for some time now.

Time passes by so quickly. It's been a month that I had posted a recipe but it feels like it's just been a couple of days. Work takes most of my time with just some left to eat and sleep. In fact, I wasn't even sure if I'll be able to participate in this month's BundtBakers challenge. It's been a long time that I have made a cake let alone a bundt one. But I'm so glad I did, especially considering the theme this time.

My first post in almost a year.

Nothing in life should be taken for granted. Life itself should not be taken for granted and I've learnt this a very very hard way. I've still not been able to come to terms with the way my life has shaped up. In fact, there's no shaping up, I just don't know where my life is headed. Every body makes mistakes, I've made too but what should one do when the consequences are of a much greater magnitude than the mistakes? Whom do you complain to? I've heard all my life that there's great strength in prayers, but I guess it doesn't work for all, it has at least not worked for me. Don't know all that has happened with me over the past year has been for good or worse.

Skinny Mango and Coconut Smoothie


Mangoes are here!!!! One of my friends had requested me to make a cake for a reunion party that he was throwing. The flavor that he requested was mango! Really? I had never used mango in a cake you see. I was skeptical and he was adamant. So I gave in and baked a mango cake.

I had to buy half a dozen of them as that's the least quantity that's sold here. Besides eating them, I decided to make a smoothie as well that included coconut in liquid form. Coconut water actually.

Summer is here. In full swing I must say. During afternoon, it gets unbearable in the kitchen and cooking lunch takes a toll. More than I hold the knife and spoon, I hold the handkerchief to keep wiping off my sweat. Such torture!
