Raspberry Jam Donut Muffins |
These raspberry jam donut muffins are a healthier and tastier(for me at least) alternative to the regular fried donuts. I always prefer baked goods rather than fried ones since that just gives me one more reason to bake and also because I tend to eat baked treats more than the fried ones. Though I always make these muffins early in the morning for breakfast, you can enjoy them any time of the day. They taste best when warm and would make such a cosy and comfort food for those cold winters and wet rainy days.
I have used raspberry jam for these muffins but you could use any jam or preserve like apricot, pineapple, strawberry..I mean any. The next time I make these I would use Nutella for the jam....yum and that would be pretty soon.
Makes 12 Muffins
Ingredients
380 grams / 13.4 ounces all purpose flour
2 teaspoons baking powder
1 teaspoon pure vanilla extract
250 ml / 8.5fl ounces milk
170 ml / 5.8fl ounces vegetable oil plus extra for greasing
2 large eggs
200 grams / 7 ounces caster or superfine sugar
jam of your choice
50 grams / 1.8 ounces unsalted butter
50 grams / 1.8 ounces granulated sugar
1/2 teaspoon ground cinnamon
Method
Grease a non stick tray well with some oil using a pastry brush. Preheat the oven to 190 degrees C / 375 degrees F. Sift together the flour, caster sugar and baking powder in a bowl and mix together well with a hand whisk.
In a measuring jug or a bowl, beat the eggs, oil, milk and the vanilla until combined. Fold this wet mixture into the dry ingredients until just combined(do not over mix). Pour one-third of the batter into each cup of the muffin tray. Add about one teaspoon of jam. Top up all the cups equally with the rest of the batter.
Bake in the preheated oven until the tops are springy about 15 to 20 mins.
Meanwhile, melt the butter. Mix the granulated sugar and the cinnamon in a shallow dish. Once the muffins are baked, place the muffin tray on the cooling rack for 10 mins. Remove the muffins from the tray and keep on the wire rack.
Once the muffins are warm enough for you to handle, dip each muffin in the melted butter and roll it in the sugar-cinnamon mixture. Eat warm.
