Is there anybody who does not like Nutella? Nutella tastes yum with everything...bread, cupcakes, cookies and what not. However, it tastes extra delicious oozing out of these moist banana muffins as you bite into them.
I was actually pondering over the west bay to incorporate Nutella in these banana muffins. Should I mix it in the batter? or should I top the muffins with Nutella? or...Well after giving it a considerable thought(overnight thought actually), I was ready early in the morning to fill my banana muffins with Nutella and I am happy I did it this way.
As I bit into these warm muffins, I was lost into the world of Nutella!
Makes 12 Nutella filled Banana muffins
85 gms unsalted butter melted
145 gms all purpose flour
115 gms caster sugar
3/4 teaspoon baking powder
1/2 teaspoon soda bi carb(baking soda)
1/4 teaspoon salt(omit the salt if using salted butter)
3 medium size ripe bananas
2 medium eggs
Preheat the oven to 200 degrees C.
Line the muffin tray with paper liners or grease and flour the tray.
In a bowl, sieve together flour, baking powder, soda bi carb and salt. Add sugar and whisk the dry mixture until all the ingredients are thoroughly blended.
Mash the bananas in a separate bowl.
In another bowl or measuring jug, beat the eggs.
Add the melted butter and mix.
Now add the mashed bananas and mix thoroughly.
Create a small well in the dry ingredients and pour all the wet mixture at once into the dry ingredients.
Fold the mixture with a spatula until just combined. It is absolutely fine if there are few small lumps in the batter but do not overmix the batter.
Divide half of the batter evenly among the twelve cups.
Drop a teaspoon of Nutella in each cup (you can also pipe out Nutella suing a piping bag instead of spooning it for a cleaner look).
Divide the rest of the batter evenly in the cups.
Bake muffins in the preheated oven for 10-15 mins till the tops are well risen, golden brown and springy to the touch. Enjoy your Nutell filled Banana Muffins.
