Meet the baker

Bakingyummies

Hi, Welcome to Bakingyummies.com. My name is Deepti and I just love and love and love baking. This love is new found and accidental though.

I was a part of corporate world for more than nine years when suddenly I got laid off during the "great recession". I was desperately hunting for a job for close to two years without any success. This made be depressed and I started getting stress related ailments. My doctor said," Just keep yourself busy with something other than thinking of getting a job".

So to keep myself "occupied", I started using my oven which only adorned my kitchen cabinet till then and thus the second greatest love of my like was born....BAKING (first being my husband). This passion of mine only grew with time and now I want to share my baking experiences with as many people as possible and hence this website.

Do feel free to contact me at deepti@bakingyummies.com for any queries related to baking and I will be happy to share my knowledge with you.

  6. Hi Deepti - I made your bread recipe and made the first decent bread ever. I have been trying on and off for several years but always seemed to get good tasting but very dense bread. I needed some buns and so I used this recipe with a little modification and made these amazing buns. Being a retired chemical engineer I like to experiment with recipes and try to figure out what works, and why.
I had difficulty with the "window pane test" I guess because I've never done it before. I will probably be trying to come up with an easier and maybe more reproducible test. With all the bread baking experts in this world you would think an easier test would have been discovered, and maybe it has and I just haven't found it. Thanks so much for sharing your expertise that has allowed me to bake some incredible bread. - Frank.

    1. Hi Frank, I'm very glad to know that you've been able to bake buns that you've actually liked :) The window pane test does take time to be understood correctly and reach that appropriate stage. It took me about 6 to 7 tries...so please don't get disheartened, with practice you'll eventually get there. There are easier methods as well, like you knead the dough until it's smooth and leave it to rest moving on with the further shaping and baking...that would work well also.

    1. Hi Jagruti, congratulations to you on your son's 21st birthday. You can use whipped cream or buttercream to decorate your cake. You can find recipes for buttercream on this blog or over the Internet. For some tips and techniques on decorating a cake, try searching over the net or just use your imagination. No matter how you decorate, I'm sure your family will like it :) after all a store bought cake can never compete with the love with that you will put in to make your own.

    1. Thank you and I am sorry to have not replied earlier, hope I am not too late. Working six days makes it a little difficult to answer queries on time. Coming to your question, I have a recipe for a vanilla cake that can be made in a microwave. Will post the recipe here by evening as I am at work right now.

    2. Hw sweet tht is!!! Thank U!! plz make tht one a Rainbow coloured one!! Thanxx

    3. Hi, what I meant was that I'll mention the recipe for u here in this reply and you can customize it according to your preference. This recipe is for a basic vanilla microwave cake. You would have to most likely double the recipe in order to make a rainbow cake (let me warn you, this process is going to be a tedious one). Once you have made the batter, divide it into seven equal parts and add the individual color to each part. Pour one part in a baking pan and refrigerate the other partsseperately. Bake (or microwave) the first part, let it cool, remove the cake from the pan, clean it and pour the second batter, bake and so on...you'll have to do this until you finish up all the seven batters. Once you are done, you can spread buttercream between each layer or between alternate layers....
Now here's the recipe: 2 large eggs at room temperature, 1/2 cup powdered sugar, 1/2 cup maida, 1 teaspoon baking powder, 1/4 cup milk at room temperature, 1/2 cup oil, 1 teaspoon vanilla essence.
Method: Sift flour and baking powder and keep aside. Using a wooden spoon or an electric mixer, beat the eggs and sugar until light and fluffy and the mixture is more than double in volume. Add essence. Add the oil and mix. Fold in the flour gradually till all the flour is used. Add milk to get a slightly thinner than a soft drop consistency. Grease a deep bowl and pour the batter in it. Microwave uncovered on 100% power for 4 mins. Do not microwave longer even if the surface of the cake does not feel firm and appears wet. Let the cake stand in the microwave for 5 mins. Cool the cake in the pan for 5 to 10 mins before removing the cake from the pan. Let cool completely.

Hope you enjoy this recipe. If you try it, let me know how it turned out for you.

    1. Thank you Pallavi. What type of oven you should buy depends on how often you bake. Also depends on how much you usually bake at a time. Let me know these details and I'll try my best to help you out.

  12. Hi Deepti,
I too like many others stumbled upon your blog by chance! Thank you for the list of resources you have here. I have been wanting to make a seriously good batch of chocolate chip cookies and the only chocolate chips I get are the micro ones from Arife or any other general store. I'm looking for some slightly bigger, round and dense chocolate chips like the ones you get in the cookies in Indigo Deli (if you haven't tried them, you must!) Any tips and suggestions on where I can find them?

    Thank You
    Pooja

    1. Hi Pooja,
When you say dense, do you mean dark chocolate? If yes, I buy mine from Delta Nutritives, but it comes in a 2.5 kg pack. Their contact details are mentioned in Baking in Mumbai page on this blog. If you mean semi sweet then let me know if you find a good quality one, since I've been looking for it since a long time now, though you get Ghirardeli sometimes in a shop called Excellence in Crawford (super expensive though)
Btw, the kind of chocolate that you are looking for is called buttons and not chips.

    1. Hi Greeshma,
I presently use Madam brand's flour(maida) and have also used flour from the local kirana shop previously. There was no noticeable difference in texture.
